Run by Fabricio and Ramiro Coronel, we know this farm really well, after visiting several times, including producing part of our WBrC 2021 winning blend. \u003c\/p\u003e\n\u003cp\u003eThe growing region of the farm sits around 1500m above sea level, surrounded and encompassed by dense jungle and reforestation projects. Fabricio grows Catucai, Sidra, and Typica Mejorado at his farm - which is located about 1km, and 500m in elevation from his house, and processing centre. They transport the cherry by donkey most of the time.\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003eThis lot is from Fabricio's Sidra trees, which are absolutely thriving in the natural jungle in Sozoranga. He picks really rich, ripe cherries, and washes and sorts in the tubs as seen in the picture below. He then depulps straight away, and lays out to dry immediately. This leaves some mucilage left on the seeds, but not so much that there's a lot of fermentation happening. The result is a very clean honey, where the mucilage doesn't oxidise too much, and the colour of the parchment remains clear - a more pale, white colour - hence the name \"White Honey\". \u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003eFabricio has built a custom dark dry room to make the drying process as controlled as possible. This lot was slow dried in this room which makes such a clean profile, with elegant florals, bright yellow and white fruits, and a juicy acidity that will linger, and develop into the sweet honey-like sweetness from hot to cold. \u003c\/p\u003e\n\u003cp\u003eIt's a super tasty cup - one that earned Fabricio the 3rd place in the Taza Dorada 2022 competition with this exact lot - which we purchased from Auction in 2022, and have since frozen down in vacuum sealed bags to preserve it, and wait for the right time to thaw, and roast for you, and here it is! Abu’s microlots are shaped by this mix of altitude and careful agronomy - sweet cherries, bright acidity, and the signature florality that has become their calling card. The cherries for this lot were picked at peak ripeness and processed with Jose’s meticulous approach for naturals - a multi phase fermentation, where the cherries are fermented, and then partially dried, followed by a further fermentation. This can lead to deeper notes in the cup, like red grape, and raspberry. The cherries are eventually fully dried there at the farm until 10% moisture. \u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThis lot has all the great qualities we've come to expect from the terroir at Abu Coffee in Canas Verdes - and the intensity and complexity from the processing that Jose has done. It starts with excellent growing high up on volcanic soil at her farm, and after selective picking, the ripe cherries are fermented with Champagne Yeast in sealed tanks before being dried. The drying is a patio drying with frequent turning to make a very clean version of a natural coffee. The coffees are grown at 1700-2100m and built from Caturra, Pink Bourbon, Castillo, and Colombia varieties.\u003c\/p\u003e\n\u003cp\u003eThe decaffeination is done using the sugarcane process, also known as Ethyl Acetate or EA decaf. In simple terms, caffeine is removed using a naturally derived compound from fermented sugarcane. The green coffee is steamed, treated with the EA solution, steamed again, then dried and polished. Subtle changes to farming practices, environmental reasons, and changes to varieties mean that the classic Kenyan profile of old is much more rare. Luckily for all of us, this Kamwangi AA lot is exactly that. You can expect those classic forest berries, and sweet, jammy sort of flavours in this awesome lot. \u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eEstablished in 1982, Kamwangi Factory (as washing stations are called in Kenya) is one of three active processing sites owned by the New Ngariama FCS, located in Gichugu Division, Kirinyaga East Sub-County of Kenya’s Kirinyaga County. The cooperative was newly registered in 1997 after the liquidation of Ngariama Farmers’ Cooperative Society and has grown to 6,000 active members, with 2,500 farmers delivering cherries to Kamwangi. The factory operates alongside affiliate sites Kainamui and Kiamugumo, using fresh water from the Nyamindi River for processing. \u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003e\u003cspan\u003eFarmers in the region cultivate SL28, SL34, Ruiru 11 and Batian. ‘SL’ varieties are cultivars originally released by Scott Agricultural Laboratories (SAL) in the 1930s and 1940s. They soon became the go-to trees for many growers in Kenya due to their deep root structure, which allows them to maximize scarce water resources and flourish even without irrigation. They are cultivated with a serious eye towards sustainability and Good Agricultural Practices, with minimal environmental impact where possible. Ruiru 11 is a new variety known for its disease resistance and high yields. It starts yielding fruit after just 2 years. These trees are grown around 1600-1700m above sea level\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eSmallholders handpick ripe cherry and deliver it to Kamwangi that day. At intake, cherry is meticulously sorted. All sorting is overseen by the cherry clerk, who ensures that only ripe, undamaged cherry Is received.  Once sorted, cherry is pulped on the factory’s disc pulper. Pulped cherry is fermented for 12 to 24 hours. Skilled staff oversee fermentation, checking regularly to ensure fermented is halted at just the right moment. After fermentation, cherry is sent through washing and grading channels before being transferred to raised beds for drying. The drying process lasts 7 to 14 days, with workers frequently turning the parchment to ensure even drying and prevent defects. The cherries are sent to the Suke Washing station where they're processed in the traditional washed fashion - floated, depulped, washed, and dried on raised beds. \u003c\/p\u003e\n\u003cp\u003eThis growing and processing leads to the classic profile we love from this lot - and at Rose we roast this coffee on the lighter side of our range - trying to accentuate more brighter fruits and florals. Getting to see their facilities, and cup their outstanding lots from a variety of processes and elevations is really impressive! We purchased a few lots from them, and the first to be released is this pre-dry natural Geisha. \u003c\/p\u003e\n\u003cp\u003eThis lot is from their Dilgo lot - it sits around 1800m above sea level at Alto Quiel, in Boquete, Panama. It covers an area of approximately 1 hectare of volcanic soil where Geisha Green Tip grows. It is adjacent to the protected area of the Volcan Baru national park, and the coffee grows in the wild forest of Guabos, Bamboo, Cenizas and Cedars with 70% shade. This particular coffee was harvested on March 4th, 2026. \u003c\/p\u003e\n\u003cp\u003eIt was then transported to our facilities in Alto Lino the next morning, where it underwent flotation to separate low-density cherries. Then it was placed on African beds in the drying greenhouse for its initial drying stage for 4 days, after reaching approximately 45% humidity. It was then placed in Grain Pro bags for 2 days to complete the fermentation process with low humidity. The coffee then underwent a drying stage in the drying room at a constant temperature of 18 degrees Celsius and 50% humidity for 35 days.\u003c\/p\u003e\n\u003cp\u003eThis 4 day pre-dry intensifies flavours of this geisha, which are created during the 2 day fermentation - just enough to elevate the quality of tropical fruit notes in this lot, while the slow cool drying guarantees a clean finish and mouthfeel in this coffee!\u003c\/p\u003e\n\u003cp\u003eWe love the profile of this coffee - and for us it's the sort of lot that you could take for a Brewing Competition as it marries complexity, sweetness, intensity, and quality so well.
